When you're craving something sweet but don't want to spend hours in the kitchen — this homemade tart is your new best friend.

Ingredients:
- 200 g shredded mozzarella
- 2 tbsp thick cream cheese (or natural sour cream alternative)
- 2 tbsp clarified butter (ghee)
- 2.5 tbsp monk fruit & erythritol sweetener (or your favorite alternative)
- A generous splash of vanilla extract
- 130 g almond flour
- 0.5 tsp xanthan gum *
Instructions:
1. Combine mozzarella, cream cheese, ghee, sweetener, and vanilla.
Gently warm until soft (double boiler or microwave).
2. Add xanthan gum and almond flour — mix until it becomes a soft, pliable dough (like playdough).
3. Roll the dough between two sheets of parchment paper and place into a tart pan.
* Xanthan gum is a natural thickener, commonly found in gluten-free sections.
Don’t be afraid of the name — it’s kitchen magic.
If you don’t have xanthan gum, simply add 1–2 tsp of cornstarch or tapioca starch to help hold the shape.
4. Pre-bake the crust at 170°C (340°F) for 15 minutes.

- A sprinkle of cinnamon
- A touch of monk fruit sweetener for a caramelized finish
